Tonight is FHE, and Saturday was Halloween, so probably the last thing on earth you want is a cookie recipe.
But these are gooooooood.
Everything But the Kitchen Sink Cookies
2 1/4 cups flour
1 1/2 cups quick oats (or old fashioned oats – ground, fine)
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup butter
1 cup brown sugar
1/2 cup white sugar
1 tsp vanilla
1/3 – 1/2 cup chocolate chips
1/3 – 1/2 cup butterscotch chips
1/3 – 1/2 cup white chocolate chips
1/3 – 1/2 cup milk chocolate – in chunks
1/3 – 1/2 cup coarsely chopped pecans
1. In a small bowl, combine flour, oats, baking powder, baking soda, and salt. Whisk together quickly.
2. In a large bowl, beat butter, sugar, and brown sugar until light and fluffy – 2-3 minutes. Add eggs and vanilla, and mix. Carefully add dry ingredients, and mix until just combined.
3. Beat in the chips.
4. Drop heaping tablespoons on cookie sheet. I like to make these big. Bake at 350 Degrees (F) for 10-12 minutes. Super scrumptious.
I like to make these cookies because they are so good and easy. Also, you can form the dough into balls, and then freeze them for about a month. (I make them into balls, place them in a little ziplock bag, and then when I need cookies, just pop them on the cookie sheet, and bake. So easy!).
